Solaia is thrilled to announce our second collaboration dinner with one of Prince Edward County’s most distinguished wineries, Exultet Estates Winery. Known for their meticulous craftsmanship and award-winning wines, Exultet Estates brings their renowned elegance to this eagerly awaited evening.
Exultet Estates, celebrated for their exquisite Chardonnays and Pinot Noirs that reflect the unique terroir of PEC, will be pairing select vintages with each course, offering guests a truly immersive taste of Prince Edward County’s finest. This exclusive evening includes multiple gourmet courses, special guests, and exceptional wine pairings to elevate your dining experience to new heights.
Arrival is 6:00pm, Dinner is 6:30pm

Knucklehead Sparkling Rose Lightly roasted fig with strawberry and balsamic compote amuse bouche
2021 Pinot Grigio “Roasted Root Vegetables & Goat Cheese” Roasted celeriac with red beet goat cheese, roasted butternut squash with local honey infused goat cheese and roasted sunchoke with parsley pesto goat cheese
2021 Cru X Chardonnay Poached Nova Scotia lobster with toasted almonds and finished with Strega cream
2022 The Beloved Pinot Noir Citrus and allspice cured duck leg confit on sauteed Quebec foie gras and wild mushrooms
