Solaia Cucina e Cantina proudly welcomes internationally recognized Chef Grant MacPherson for an exclusive Chef Collaboration Dinner, bringing together culinary mastery and world-class hospitality.
With a career spanning Michelin-starred kitchens and luxury dining destinations across the globe, Chef MacPherson has left an indelible mark on the culinary world. From his humble beginnings in Scotland to his international journey through South Africa, Asia, Europe, and North America, his passion for using the finest seasonal ingredients and creating uncomplicated yet exquisite cuisine remains at the heart of his cooking.
MacPherson is a transformative culinary visionary who has led some of the world’s most prestigious kitchens including Raffles Hotel Singapore, Bellagio Las Vegas, Wynn Las Vegas and Wynn Macau, Four Seasons London, Ritz Carlton Big Island, and The Ned in London. He has shaped menus and dining concepts for global brands such as Jean-Georges' Tin Building NYC, New Realm Breweries, Salute Santé! Grapeseed Oil, and Wilde Irish Gin. Currently, Chef MacPherson continues to lead and contribute to the success of Wynn Resort UAE, while also curating unique dining experiences under his Scotch Myst hospitality brand.
At Solaia, this one-night-only event will celebrate a carefully crafted, lobster-themed, three course menu featuring dishes from Chef MacPherson's new recipe book, Viva La Lobster. Each course will be expertly paired with wines to enhance the experience, offering guests an unforgettable evening of culinary artistry.
We are also happy to announce a special guest appearance by pioneering winemaker and entrepreneur Donald J.P. Ziraldo. Ziraldo, a name synonymous with the success of Canadian wine on the global stage, helped transform Niagara, Ontario, into a world-class wine region. His vision, dedication, and relentless pursuit of excellence led to the resurgence of premium winemaking in Canada and the international recognition of Canadian Icewine.
Each guest will also receive a signed copy of the Viva La Lobster recipe book and a chance to meet world-renowned Chef MacPherson in person. Tickets are available through the link in our Bio. Seating is limited.

About the Chef
Chefs who leave their mark on the culinary world share common traits: passion & attention to detail. Rarely does he toot his own horn; however, when asked about his favourite city, kitchen, chef, or ingredient, Grant’s face lights up with excitement. Grant continues to focus his passion on creating uncomplicated-delicious food using only the finest seasonal ingredients. From his humble beginnings in Scotland to his new home in Canada via South Africa, each country’s culture influenced & shaped Grant’s outlook as well as his desire to learn & master his culinary skills.
A well-rounded chef often credits their success to starting at the bottom rung & working each station in the kitchen. Grant gives credit to his first job at Bugsy’s chopping 1,000 pounds of chicken wings daily & to his mentor, Chef Stan West at the Niagara Culinary Institute for instilling in him the discipline, desire, & passion needed to reach the same caliber as the iconic chefs he had admired & read about in cookbooks.
Far from his culinary school beginnings, Grant has created menus & led kitchen brigades at some of the most prestigious hotels & kitchens worldwide: The Raffles Hotel, Singapore “The Grand Old Lady of the Far East, Bellagio Hotel, Wynn Las Vegas, Wynn Macau, Regent Hotels Sydney, Kuala Lumpur, Singapore, Four Seasons London, Ritz Carlton Big Island, Sandy Lane Hotel Barbados, Hilton Hotel (Westgate Hotel), Wynn Palace Cotai, The Ned, Yellowstone Club, New Realm Breweries, San Manuel Casino, Encore Boston Harbor, Hakkasan, Tin Building NYC, Oak View Group & Crown Australia.
Grant continues to forge new paths while creating unique hospitality concepts & dining experiences under his brand & consulting firm, Scotch Myst. He also has many projects on the horizon. His client base & alliance projects vary, ranging from restaurant concepts, menus, staffing, & culinary brands. Fresh Lobster Salad with artichoke hearts and beetroot, finished with goat cheese.
Hudson Bay Lobster Bisque with carrot and celery root slaw, finished with crème fraîche.
Maple-Glazed Lobster Saltimbocca with rhubarb, heirloom cherry tomatoes, and Asiago.
Each dish will be paired with local Canadian wines.
